fa بررسی جدیدترین روش های زیستی و غیر زیستی در سمیت زدایی مایکوتوکسین ها بیوشیمی بیوشیمی كاربردي Applicable <div align="justify" style="direction: rtl"><font size="2"> مایکوتوکسین ها به عنوان یک عامل خطر بالقوه برای سلامت انسان و حیوان در نظر گرفته می شوند. خوراک آلوده به مایکوتوکسین ها می توانند باعث اختلالات و بیماری های جدی در دام ها و بالطبع به خطر انداختن سلامت انسان ها شوند. همچنین آلودگی محصولات کشاورزی به مایکوتوکسین ها، سبب خسارات اقتصادی بسیاری در صنایع غذایی، دامی و کشاورزی می شوند. روش های سم زدایی فیزیکی و شیمیایی متفاوتی برای مقابله با مایکوتوکسین ها استفاده شده است. با این حال، تعداد کمی از آن ها دارای کاربرد عملی هستند. یکی از رویکردهای جدید و امیدوارکننده برای محافظت از موجودات زنده و بهبود کیفیت مواد غذایی و دامی در برابر اثرات مضر مایکوتوکسین ها استفاده از موادی است که به اصطلاح mycotoxin binders و mycotoxin modifiers نامیده می شوند. mycotoxin binders موادی هستند که به رژیم غذایی دام به منظور کاهش جذب مایکوتوکسین ها از دستگاه گوارش و توزیع شان به خون و ارگان ها هدف اضافه می شوند. mycotoxin modifiers هم موادی هستند که با اتصال سطحی یا تجزیه کردن یا با تغییر شکل دادن مایکوتوکسین ها و تبدیل آن ها به متابولیت های غیر سمی عمل می کنند. در این مقاله مروری به بررسی مهم ترین انواع mycotoxin binders و mycotoxin modifiers، مکانیسم عمل و کاربردشان برای مقابله با انواع مختلف مایکوتوکسین ها پرداخته شده است. </font></div> <div align="justify" style="direction: ltr"> <font size="2">Mycotoxins are considered as a potential risk factor for human and animal health. Food contaminated with mycotoxins can cause serious eye disorders and diseases in livestock and are thus endangering human health. Also, agricultural products contaminated with mycotoxins cause many economic losses in the food industry, livestock and farm. Different physical and chemical detoxification methods have been used to deal with mycotoxins. However, few of them are practical. One of the promising approaches for protecting and improving the quality of food and animal organisms against the harmful effects of mycotoxins is use of substances which are called mycotoxin binders and mycotoxin modifiers. Mycotoxin modifiers are substances that bind mycotoxins surface or break down or transform into non-toxic metabolite act.
